- Adventure tourism for people with disabilities in Portugal: opportunities and challengesPublication . Lima Devile, Eugénia; Antunes Moura, Andreia FilipaRecently, tourism for all appears as a phenomenon of strategic importance within the world. Contemporary society recognizes the need for inclusion of all and the universal right to participate in tourism activities that enhance human and social development. At the same time, it is important to stress out that, this relatively recent concern and sensitivity, is strictly related to two other global phenomena, aging population and quest for healthier life styles. Therefore, knowing that new realities imply alternative solutions, we believe active tourism combines symbiotically with accessible tourism, emerging as an opportunity for progress at different levels. Within this context, a more dynamic dimension of the tourism offer, adventure tourism for all, should be considered an opportunity for personal well-being, or else, quality of life of its participants. In addition, developing adapted adventure tourism activities to the disabled population will simultaneously provide new business opportunities. In Portugal, we have witnessed a growing interest in accessible tourism and observed the promotion of various public and private initiatives responding to the new tourism development trends. Thus, we suggest a new challenge for the sector under the adapted adventure tourism, presenting two perspectives of reflection in terms of the viability of the proposal and management of the tourism destination. In this paper we will discuss the relevance of accessible adventure tourism activities as an innovative development strategy, responding to new market demands, and potentially adding value to tourism products and destinations. We will base our presentation on a literature review as well as on the analysis of case studies undertaken in Portugal. This could have a pedagogical effect both on those responsible for the tourism sector and on tourists themselves, with or without disability, thus contributing to fight against stereotypes and prejudice still present in our society.
- Constrangimentos e estratégias de negociação das pessoas com necessidades especiais para participarem na atividade turísticaPublication . Lima Devile, Eugénia; Antunes Moura, Andreia Filipa; Alves, Joana Pimentel; Figueiredo, ElisabetePretende-se com este capítulo compreender, por um lado, as principais barreiras com que se deparam as pessoas com necessidades especiais (PcNE) no âmbito das suas viagens turísticas e, por outro, compreender de que forma se adaptam no sentido de as ultrapassar ou atenuar. Para atingir estes objetivos, optou-se por uma abordagem metodológica qualitativa, através da realização de entrevistas semiestruturadas a um conjunto de 38 pessoas com diferentes incapacidades e/ou necessidades especiais. Os resultados revelam a existência de um grande número de constrangimentos relacionados, quer com as caraterísticas individuais das PcNE, quer também com os que resultam da relação com outras pessoas. Mesmo assim, as PcNE continuam a participar em atividades turísticas, utilizando estratégias distintas para ultrapassar ou atenuar os constrangimentos encontrados. Foram também observadas algumas disparidades nos constrangimentos, de acordo com o tipo de necessidades especiais, embora muitos constrangimentos sejam transversais a todos os participantes. O capítulo termina com algumas implicações e recomendações para o setor do turismo e para outros atores, que podem ser adotadas no sentido de tornar a prática turística acessível a todas as pessoas.
- Explorando a Intersecção entre Economia Circular, Gastronomia e SustentabilidadePublication . Antunes Moura, Andreia Filipa; Costa, Vânia; Lima Devile, Eugénia; Camões, Henrique; Maia, Beatriz; Melo, CarlaThe purpose of this research is to examine the scienti c production and international trends and recommendations on circular economy, gastronomy, and sustainability concepts. A bibliometric analysis was carried out in the SCOPUS and Web of Science (WOS) databases, and the extracted results considered relevant were processed in the VOSviewer software. In a total of four hundred articles considered, Italian, Spanish and American authors are responsible for most of the research carried out. There has been a growing evolution in scienti c production in the last decade, due to the contribution of three hundred authors to the theme, and the main agencies that nancially support research are of European origin. Findings uncover eight crucial areas that emphasize the intricate relationship among these concepts. While the circular economy is inherently connected to sustainability, a noticeable dis parity arises when compared to concepts like gastronomy and tourism. The association between the circular economy and the central tenet of sustainability, though present, seems somewhat distant, and also leaning closer to restaurants than encompassing the broader eld of gastronomy. These results help to systematize the characteristics of the scienti c literature produced on the theme and raise awareness to the importance of circular practices in the restaurant sector and serve as a guideline for entrepreneurs and managers in choosing more sustainable and eco-e cient operating alternatives. It is the rst study that addresses the intersection of circular economy and local gastronomy as a contribution to a more sustainable restaurant sector.
- Necessidades e motivações das pessoas com necessidades especiais para participar no turismoPublication . Antunes Moura, Andreia Filipa; Lima Devile, Eugénia; Eusébio, CelesteO presente capítulo tem como objetivo analisar as necessidades e as motivações das pessoas com necessidades especiais (PcNE) para participarem em atividades turísticas. Para dar resposta a este objetivo, recorreu-se a uma metodologia mista (entrevistas e questionários a uma amostra de pessoas com necessidades especiais residentes em Portugal). Foram realizadas 38 entrevistas e administrados 504 questionários. Do total dos inquiridos, 113 (22,4% do total) nunca realizaram uma viagem turística. Dos diferentes grupos de inquiridos, são as pessoas com incapacidade as que revelam menor taxa de participação em atividades turísticas. Os resultados revelam que existem necessidades específicas deste mercado, não só em termos de acessibilidade física dos equipamentos e espaços, mas também em termos de serviço e atitude dos recursos humanos que trabalham no setor que, muitas vezes, não são conhecidas pela indústria turística. Outra necessidade importante está relacionada com a existência de informação sobre a acessibilidade dos produtos turísticos em canais de comunicação que sejam acessíveis. Estas necessidades devem ser conhecidas e satisfeitas para que a indústria turística seja acessível e para que as pessoas com necessidades especiais possam participar em experiências turísticas e beneficiar, em termos de qualidade de vida, dessa participação, uma vez que este mercado está fortemente motivado para participar em experiências turísticas. A diversão, o aumento do conhecimento, o descansar, o sair do ambiente habitual e o desenvolvimento de competências são motivações muito importantes deste mercado.
- An Overview of Higher Education in Tourism and Hospitality in PortugalPublication . Theoretical Framework: The research is grounded in concepts of labor market demands, educational alignment, and workforce development amid digital, societal, and economic transformations. Theories on skills mismatch and human capital development help understand the dynamics between education and employment in this sector. Method: A comprehensive review of higher education offerings in tourism and hospitality in Portugal was conducted, assessing the number of courses and student vacancies while analyzing job market trends. Data were collected from national educational databases and industry reports to examine the evolving relationship between educational programs and labor needs. Results and Discussion: Results indicate a notable increase in tourism and hospitality courses and student vacancies in Portugal’s higher education system, reflecting efforts to cultivate a skilled workforce. However, gaps persist in regional job distribution and the need for specialized training in certain areas. Research Implications: The findings suggest that higher education institutions are progressing in closing the skills gap by offering programs aligned with industry needs, which may influence workforce development strategies and curriculum design. Originality/Value: This study contributes to the literature by analyzing Portugal's educational response to labor market shifts, highlighting the growing alignment between education and industry needs, and providing actionable insights for improving human capital development in tourism and hospitality.
- Tourism Sector: Evidence Of Business Dynamics in PortugalPublication . Costa, Vânia; Pereira, Raquel; Loureiro, Isabel Sofia; Campinho, Sara; Antunes Moura, Andreia Filipa; Mira, Maria do Rosário; Silva, Goretti; Silva, SusanaAn in-depth understanding of the business dynamics of a given sector enables key stakeholders to define appropriate strategies for its development, promotion and consolidation. This study aims to analyse the Portuguese tourism and hospitality sector, characterising the companies and their business dynamics between 2011 and 2022. It uses a Related-Samples Friedman‘s Two-Way Analysis of Variance by Ranks to identify any statistically significant differences between the subsegments of Hotels and Restaurants, Recreational and Cultural Activities, and Transports and Logistics using specific competitiveness indicators. The results show significant differences between the subsegments in some indicators. The sector is resilient and plays a key role in recovering from highly impactful challenges. Micro and small companies employ thousands of people and make hotels and restaurants a key subsegment of activity for the sector. This study contributes to a comprehensive understanding of the dynamics of the tourism sector, providing valuable information to industry players and researchers.
- Tourism sustainability, friendly policies, and infrastructure: Digital nomads’ motivations for visiting PortugalPublication . Mira, Maria do Rosário; Antunes Moura, Andreia Filipa; Araujo, NayaraThis research analyses digital nomads’ relationship with tourism, their motivations for travelling and their expectations of the destinations they visit. In addition, it aims to understand the lifestyle of this public and their preference for sustainable destinations, as well as the implications for policies and the organisation of tourism infrastructure, in line with their specific needs. A questionnaire was administered to users of open-access social networks or members of online digital nomad communities (n = 34), between December 2022 and March 2023. Descriptive statistics, construct validations, reliability and internal consistency of the measures were carried out and Pearson’s linear correlation coefficient (r) was applied between items of the same scale and different scales. The results indicate that quality of life, life-work balance, living with other cultures, being in contact with nature, escaping from large urban centres, indulging in tourism all year round and travelling for long stays, are the main motivations of this public. The importance of quality Wi-Fi, flexible tourist services and support services is emphasised as the main attributes to be considered in tourist destinations.
- Tourism, Economic Development, and Regional Inequality in Portugal: A Data-Driven Approach from 2012 to 2022Publication . Mira, Maria do Rosário; Antunes Moura, Andreia Filipa; Costa, Vânia; Pereira, RaquelThis study explores the regional disparities in the tourism sector in Portugal between 2012 and 2022 with the aim of understanding how the spatial distribution, typology, and scale of tourism enterprises relate to regional wage dynamics. Using a quantitative approach, the analysis draws on secondary data from the Ministry of Labour and the Bank of Portugal, incorporating information on business characteristics and average employee remuneration across NUT II or regions. A combination of descriptive statistics, linear mixed-effects regression models, time series analysis, and ANOVA tests were employed to capture both temporal and territorial variations. The findings reveal a notable concentration of larger tourism enterprises in Lisbon, the North, and the Algarve, coupled with persistent wage disparities that tend to favour these same regions. Although average wages have increased, they remain insufficient in areas with high living costs, raising concerns about tourism’s redistributive potential. The study provides empirical evidence that tourism may exacerbate rather than reduce regional inequalities. By highlighting the territorial dimension of economic outcomes, this research offers valuable insights for policymakers and contributes to a more nuanced theoretical understanding of tourism-led development.
- The Tourist Gastronomic Experience: Ties Between Young Foodies’ Motivation and Destination Development in PortugalPublication . Antunes Moura, Andreia Filipa; Mira, Maria do Rosário; Teixeira, Ana RitaGastronomic tourism has become a dynamic segment within the tourism sector, serving as a vital tool for the economic, cultural, and environmental growth of regions that emphasize culinary experiences. This study examines the motivations of young food-motivated tourists (“foodies”) and their impact on travel choices and destination development. Using a quantitative methodology, data were collected from 170 respondents (131 valid answers) in Portugal. The data were collected through the PTFoodies survey, a tool specifically designed by the authors to analyze tourist motivations and their connections to destination attributes. Principal Component Analysis (PCA) identified five key factors—endogenous products, local gastronomy, quality and innovation, authenticity and tradition, and diversity—revealing a balance between sustainability, local authenticity, and openness to innovation in tourist preferences. Additionally, correlation analysis highlighted significant relationships between motivations, such as the strong association between an interest in culinary routes and event participation and between local product appreciation and the preference for organic food. These findings contribute to both theory and practice by refining motivational theories specific to gastronomic tourism, offering insights into destination development strategies and emphasizing sustainable practices that resonate with tourists’ preferences. The study provides destination managers with actionable strategies to attract food-motivated tourists and foster sustainable community growth through gastronomic tourism.

Cabral, Adília Rita; Antunes Moura, Andreia FilipaO desenvolvimento do turismo tem demonstrado, nas mais diversas “geografias”, que estamos perante uma atividade económica por excelência, que se tem afirmado como um instrumento de desenvolvimento e alavancagem dos diferentes setores de atividade. Ao gerar riqueza e oportunidades de mobilidade social, o fenómeno turístico é hoje olhado também como uma forma equilibrada de combater a pobreza, quer através da inclusão das comunidades locais nas atividades económicas, quer pela aplicação de diferentes políticas e programas turísticos acessíveis a todos. Assim, a análise da atividade turística deve considerar que o turismo tem impactes sobre o destino, sobre a sociedade – nas regiões de origem – e sobre os turistas. Com o propósito de apresentar uma nova visão da atividade turística e um encadeamento conceptual ligado ao turismo social e à sua importância no desenvolvimento sustentado das comunidades, a análise aqui apresentada enfatizará o papel do turismo como fator de inclusão e coesão social.
