Resumo
O presente relatório de estágio descreve às atividades desenvolvidas em laboratório
de análises físico-químicas, na empresa Sorgal SA, em virtude do estágio curricular
vinculado ao Mestrado de Engenharia Alimentar. A segurança alimentar e a qualidade
dos alimentos para animais são pontos vitais durante o fabrico das rações. Com a
realização das análises físico-químicas aos produtos acabados como também às
matérias-primas fiscaliza-se estes pontos durante toda a fabricação e assim garante-se
a obtenção de produtos aptos ao consumo animal. Destaca-se como principais
matérias-primas o milho, soja, girassol, trigo, óleos vegetais e de peixes entre outros. O
processo tecnológico varia de acordo com o tipo de alimento que se deseja produzir e
para qual animal se destina, origindo três tipos de rações: farinada, granulada e
extrusada. Ao longo deste trabalho encontrar-se-á informações a respeito dos
processos de fabrico dentro das áreas de alimentos compostos, aquacultura e pet
food, relata as análises efetuadas pertinentes ao controlo da qualidade, destacando-se
proteínas, gorduras, humidade e aflatoxinas e sua importância.

Abstract The present stage report describes the activities developed in the laboratory of physical chemical analisys, in the company Sorgal SA, due to the curricular internship linked of the Masters of Food Engineering. Food safety and the quaity of food for animals are vital points during the manufacture of foodstuffs. By conducting the analyzes, these points are monitored throughout the manufacturing process, thus ensuring the production of products suitable for animal consumption. It stands out as main raw materials corn, soybean, sunflower, wet, vegetable and fish oils among others. The technological process varies according to the type of food to be produced and to which animal it is destined, originating three types of pasturage: flour, granulated and extruded.Throughout this work, we will find information about manufacturing processes within the areas of compound feed, aquaculture and pet food.Relevant analyzes relates to quality control, with emphasis on proteins, fats, moisture and aflatoxins among it´s importance.
