Este relatório vem no seguimento do estágio integrado no plano de estudos do Mestrado em Engenharia Alimentar da Escola Superior Agrária de Coimbra, do Instituto Politécnico de Coimbra.O estágio foi realizado na entidade Auchan Retail, na cidade de Aveiro, entre agosto de 2022 e maio de 2023. O estágio foi realizado no departamento de produtos frescos, mais precisamente, nos mercados de padaria, pastelaria e gastronomia.O foco deste relatório é analisar a evolução da qualidade, evidenciando a sua importância e explicar o impacto que a certificação de serviços de fabrico e comercialização de produtos frescos desenvolvida pela Auchan Retail tem no modo de atuar dos colaboradores e os benefícios e dificuldades que a mesma traz ao negócio.A conclusão retirada é que o consumidor atual é informado sobre as suas escolhas de consumo e privilegia um atendimento de qualidade e confiança, o que torna este tema de extrema importância para o sucesso dos negócios no mercado.
This report follows the internship integrated into the study plan of the Master's in Food Engineering at the Escola Superior Agrária de Coimbra, at the Instituto Politécnico de Coimbra.The internship was carried out at the Auchan Retail entity, in the city of Aveiro, between August 2022 and May 2023. The internship was carried out in the fresh products department, more precisely, in the bakery, pastry and gastronomy markets.The focus of this report is to analyze the evolution of quality, highlighting its importance and explaining the impact that the certification of manufacturing and marketing services for fresh products developed by Auchan Retail has on the way employees work and the benefits and difficulties that the same brings to the business.The conclusion of the withdrawal is that today's consumer is informed about their consumption choices and favors quality and reliable service, which makes this topic extremely important for the success of businesses in the market.
