Abstract(s)
Este trabalho teve como base o estudo das aplicações de métodos de filtração
tangencial na indústria dos lacticínios, mais especificamente a ultrafiltração, osmose
inversa e microfiltração em leite bovino na Unidade fabril da Lactogal, em Oliveira de
Azeméis. O trabalho envolveu o acompanhamento de produções de leite com redução
de 50% de lactose e com incremento do seu teor em proteína, com recurso a uma
instalação de ultrafiltração acoplada a uma unidade de osmose inversa e diafiltração,
utilizando membranas orgânicas com configuração em espiral e tamanho de poro
entre 1,5 a 100 nm.
Também foi efectuado o acompanhamento do processo de microfiltração de
leite bovino com o objectivo de redução da sua carga microbiana até 99%, com recurso
a uma unidade de microfiltração utilizando membranas cerâmicas com configuração
tubular e tamanho de poro de 1,4µm.
Como trabalho futuro, a microfiltração surge como um processo de simples
aplicação na clarificação da salmoura tendo aplicabilidade na unidade de fabrico de
queijo da empresa, apresentando mais vantagens em relação ao tratamento químico
utilizado actualmente.
Para além do impacto das tecnologias de membrana na indústria de lacticínios
nomeadamente em termo de novos produtos, foi possível ainda constatar a sua importância na valorização de subprodutos e resíduos.

This work was based on the study of applications of tangential filtration methods in the dairy industry, more specifically ultrafiltration, reverse osmosis and microfiltration in bovine milk at the Lactogal plant in Oliveira de Azeméis. The work involved the monitoring of milk production with a 50% reduction in lactose and an increase of its % in protein, using an ultrafiltration plant coupled to a reverse osmosis unit and diafiltration, using organic membranes with configuration in spiral and pore size between 1.5 to 100 nm. The microfiltration process of bovine milk was also monitored with the aim of reducing its microbial load till 99% using a microfiltration unit using ceramic membranes with a tubular configuration and a pore size of 1.4 µm. As future work, microfiltration appears as a simple application process in brine clarification having applicability in the company cheese making unit, presenting more advantages in relation to the chemical treatment currently used. In addition to the impact of membrane technologies in the dairy industry, especially in terms of new products, it was also possible to verify its importance in the valorization of by-products and residues.
