| dc.description.abstract | RESUMO Ao longo dos anos, tem-se verificado que a massificação do consumo de alimentos transformados e a globalização dos mercados têm influenciado de forma significativa as exigências dos consumidores no que diz respeito à Qualidade e Segurança dos Alimentos. A crescente exigência dos clientes e a preocupação das empresas em garantir a segurança dos produtos por si fornecidos e comercializados, conduziu há necessidade das indústrias alimentares se certificarem de acordo com referenciais específicos. Neste sentido surge o objectivo deste trabalho, que consiste na implementação da norma International Food Standard (IFS), versão 6, numa Indústria Avícola. Para planear e estruturar o Sistema de Gestão da Qualidade e Segurança Alimentar a implementar, foi realizado numa fase inicial do trabalho, após o conhecimento das infra- estruturas e processos de fabrico, bem como a leitura e interpretação do IFS, um levantamento de necessidades da empresa, de forma a dar cumprimento a cada um dos requisitos da respectiva norma. Com base nessa planificação foi possível estabelecer determinadas práticas a implementar, bem como a actualização e elaboração da documentação associada. Com a implementação da IFS, a empresa fica dotada de um Sistema de Gestão da Qualidade e Segurança Alimentar, que facilita a sua integração em mercados internacionais, garante uma resposta concreta para a alta Segurança e Qualidade dos Produtos e expectativas dos clientes, permitindo fazer face à grande competitividade dos mercados que se tem verificado nos últimos anos. Implementação da IFS numa Indústria Avícola Página | IV ABSTRACT Over the years, it was found that the high consumption of transformed food products and the globalization of the markets have significantly influenced consumer’s demands with regard to Quality and Food Safety. The growing demand of customers and business concern in ensuring the Safety of the products that they sold and deliver, has led the food industry to the need of certificate on by specific references. Thus. the objective of this work, consisted in the implementation of the International Food Standard (IFS), version 6, in an Industry of Precooked and Frozen Products. To plan and structure the Management System of Quality and Safety to implement, after the knowledge of the infrastructure and manufacturing processes, as well as after reading and understanding the requirements of the IFS, it was undertaken an assessment of the company needs in order to comply with the requirements of the IFS. Based on the planning, it could be established and implemented certain practices, as well as updated and developed associated documentation. With the implementation of IFS, the company is equipped with a Management System for Quality and Safety, which facilitates its integration into International Markets, provides a concret response to the high Safety and Quality demands and expectations of customers allowing therefore for a better position of this industry considering its competitiveness.
