Este relatório resulta do estágio curricular do mestrado em Engenharia Alimentar
da Escola Superior Agrária de Coimbra. Este estágio decorreu entre os dias 7 de janeiro
de 2019 e 7 de julho de 2019 na empresa Gelcentro – Comércio de Produtos
Alimentares Congelados, Lda. O objetivo principal foi a elaboração de um plano de
mitigação da fraude alimentar, que corresponde ao requisito 4.2.4.8 da norma IFS
Logistics.
As diversas fraudes alimentares que têm ocorrido a nível global nas últimas
décadas levaram ao desenvolvimento de medidas para controlar a situação e não tornar
a falta de controlo alimentar num problema mundial, uma vez que as consequências da
fraude alimentar podem provocar elevados desequilíbrios económicos e de qualidade.
Para efetuar um controlo da qualidade alimentar mais adequado, foi publicada em
junho de 2018 uma nova versão do referencial IFS Logistics, que se distingue pelo
objetivo conjunto do comércio e da indústria para criar transparência e confiança em
toda a cadeia de fornecedores. Esta versão contém pela primeira vez um requisito
específico que obriga as empresas que pretendem obter a certificação por este
referencial a implementar um plano de mitigação da fraude alimentar.
Neste relatório é inicialmente feita uma breve descrição da empresa onde foi
realizado o estágio. São depois apresentados os principais requisitos da norma IFS
Logistics e a forma como são implementados na empresa. De seguida, é feita uma
abordagem ao problema da fraude alimentar, mostrando a forma como este problema
tem vindo a aumentar e quais as medidas implementadas para o controlar. Finalmente,
é apresentado o plano de mitigação da fraude alimentar desenvolvido durante o período
de estágio.

This report results from the curricular internship of the Master's degree in Food Engineering from Escola Superior Agrária de Coimbra. This internship took place from January 7th, 2019 until July 7th, 2019 at Gelcentro – Comércio de Produtos Alimentares Congelados. The main aim was the elaboration of a food fraud mitigation plan, which meets the requirement 4.2.4.8 in the IFS Logistics standard. The several food frauds that have occurred all over the world in recent decades, measures have had to be developed to control this situation in order not to make the lack of food control a worldwide problem, since the consequences of food fraud can lead to high economic and quality imbalances. So, to have a more adequate food quality control, a new version of the IFS Logistics framework was published in June 2018, which distinguishes itself by the joint aim of trade and industry to create transparency and trust across the whole supply chain. This version contains for the first time, a specific requirement that requires companies seeking certification by this standard to implement a food fraud mitigation plan. This report initially gives a brief description of the company where the internship took place. Then, the main requirements of the IFS Logistics standard are presented and the way they are implemented in the company is explained. Next, an approach to the problem of food fraud is made, showing how this problem has been increasing and what measures have been implemented to control it.
