| dc.description.abstract | O envelhecimento em Portugal, na última década, tem vindo a agravar-se constantemente, de forma a resultar numa maior necessidade dos cuidados por parte dos idosos.Desta forma, surgem as instituições de apoio social onde promovem a saúde física e mental dos utentes, colmatando com afetos e emoções indispensáveis ao seu bem-estar.As instituições ao lidarem com idosos, devem ter uma responsabilidade adicional ao nível da segurança alimentar, devido a estar em causa a saúde de uma população debilitada, encontrando-se expostos a sofrer maiores consequências aquando da ocorrência de riscos durante a confeção e distribuição de géneros alimentícios.As mesmas instituições de apoio social apresentam trabalhadores que se encontram expostos a perigos e riscos, sendo um dos objetivos a otimização dos procedimentos já existentes.Foi analisada a situação atual de um lar de idosos, em termos da segurança alimentar e segurança no trabalho, passando pela atualização do sistema HACCP e o seu acompanhamento, a elaboração da nova matriz de avaliação de riscos, a sensibilização dos trabalhadores e propostas de melhoria de forma a melhorar as condições de trabalho. | pt_PT |
| dc.description.abstract | The aging process in Portugal in the last decade has been steadily worsening, resulting in a greater need for care by the elderly.Thus, social support institutions arise where they promote the physical and mental health of users, providing them with affection and emotions that are indispensable to their well-being.When dealing with the elderly, institutions must have an additional responsibility in terms of food safety, because the health of a debilitated population is at stake, and they are exposed to suffer greater consequences when risks occur during the preparation and distribution of food.The same social support institutions have workers who are exposed to hazards and risks, and one of the goals is to optimize the existing procedures.The current situation of a nursing home in terms of food safety and occupational safety was analyzed, including the updating of the HACCP system and its monitoring, the elaboration of the new risk assessment matrix, the awareness of the workers, and improvement proposals in order to improve working conditions. | pt_PT |
