O presente relatório descreve as atividades desenvolvidas durante o estágio
curricular, integrado no mestrado em Engenharia Alimentar da Escola Superior Agrária
de Coimbra, realizado na empresa Dan Cake, S.A, em Coimbra, durante o período de 7
de janeiro a 7 de julho de 2019.
A Dan Cake, é conhecida, tanto a nível nacional, como internacional pela oferta de
biscoitos e bolachas, como apple strudel, brownies, chocolate chip cookies e biscoitos
“Bom dia”, butter cookies, tortas, tostas, bolos, croissants, madalenas, queques, palitos
champanhe, pipocas, waffles, e outros produtos de pastelaria.
O presente relatório pretende expor as tarefas desenvolvidas na Dan Cake
relacionadas com a qualidade dos seus produtos. Assim, as tarefas envolveram a análise
das matérias-primas e produtos finais, a avaliação dos requisitos legais de clientes e a
gestão da qualidade e segurança alimentar. Ao nível do processo produtivo, o controlo
de processo e qualidade desde a receção das matérias-primas ao produto final foi
acompanhado nas várias linhas de produção. O controlo efetuado nas várias secções de
produção garante não só a qualidade e a segurança alimentar dos produtos, mas
também a satisfação dos clientes.
Dado que a Dan Cake é uma das maiores empresas produtoras do produto Butter
Cookies, os exemplos referidos ao longo do texto referem-se a este produto.
Com as atividades realizadas nas várias secções da empresa, foi possível consolidar
um conjunto de conhecimentos que dizem respeito à gestão da qualidade e concluir
que, de acordo com as tarefas realizadas, a empresa Dan Cake cumpre as condições de
fabrico e higienização da indústria de pastelaria e produz produtos de qualidade.

The current report consists of the description of the activities carried out during the internship at the company Dan Cake, S.A., located in Coimbra, from the 7th January till the 7th July 2019, as part of the Master Degree in Food Engineering at the Higher Education Institute “Escola Superior Agrária de Coimbra”. Dan Cake is a well-known company, both national and internationally for its range of biscuits and cookies, such as the “apple strudel”, the “brownies”, the “chocolate chip cookies”, the “Bom Dia” biscuits, and also its roll cakes, bread toasts, cakes, croissants, madeleines, muffins, ladyfingers, popcorns, waffles among other pastry products. This study’s aim is to present all the tasks developed at Dan Cake related to its products quality. These tasks consisted on the following: raw material and final product analysis; customer’s legal requirements evaluation; quality assurance and food safety monitoring. In terms of the production process, it was possible to monitor it and its quality from the receipt of the raw material up to the dispatch of the final product at the several production departments. The control that is done at the several production sections ensures not only the quality and food safety of the product, but also the customer’s requirements fulfillment. Considering that Dan Cake is one of the companies with the largest production of the “Butter Cookies”, all the situations here indicated refer to this product. The activities carried out at the several Departments of this company allowed to consolidate a set of knowledge concerning quality assurance and to conclude that, according to these, Dan Cake fully complies with the manufacturing and sanitation conditions of the confectionary industry and its products are of assured quality.
