O presente relatório foi elaborado no âmbito da Unidade Curricular – Estágio do
Mestrado em Engenharia Alimentar da Escola Superior Agrária de Coimbra, realizado na Adega
de Cantanhede no período de 10 de janeiro a 10 de julho.
O estágio é um período de elevada importância na formação académica, uma vez que
permite o contato com a realidade profissional, possibilitando a aplicação dos conhecimentos
teóricos e teórico-práticos anteriormente adquiridos. O estagiário acompanhou e executou os
processos de vinificação de diferentes tipos de vinhos, monitorizando vários parâmetros físicoquímicos, executando tarefas de rotina e participando na tomada de decisão da equipa de
enologia. Tendo em conta que a empresa possui vários sectores, o estagiário passou um pouco
por todos eles, de forma a obter um conhecimento generalizado.
Neste relatório tem-se como principal objetivo a descrição dos procedimentos e tarefas
realizados pelo estagiário. Na primeira parte do relatório caracteriza-se a região da Bairrada e
descreve-se a Adega de Cantanhede. Na segunda parte descrevem-se os processos de vinificação
dos vários tipos de vinhos. Por fim, faz-se uma análise da experiência que foi a realização do
estágio e do trabalho desenvolvido.

This report was elaborated within the discipline - Internship in the Master's degree in Food Engineering at the Escola Superior Agrária de Coimbra, held at the winery “Adega de Cantanhede” from January 10th to July 10th . The internship is a period of high importance in the academic formation, once it allows contact with professional reality, enabling the application of the previously acquired theoretical and theoretical-practical knowledge. The intern accompanied and executed the winemaking processes of different types of wines, monitoring various physicochemical parameters, performing routine tasks and participating in the decision making of the oenology team. Taking into account that the company has several sectors, the intern went through all of them in order to gain generalized knowledge. This report has as its main goal the description of the procedures and tasks performed by the intern. In the first part of the report, we have the characterization of the Bairrada region and the description of the Adega de Catanhede. The second part presents the winemaking processes of the various types of wines. Lastly, it is made an analysis of the experience that was the accomplishment of the internship and the tasks developed. Keywords: Oenology, Winemaking, Food Security, Wine and Bairrada
