Abstract(s)
Atualmente, a sustentabilidade ambiental representa uma preocupação para a sociedade. O
desenvolvimento não sustentável considera-se uma ameaça para o meio ambiente.
A presente dissertação tem como objetivo caracterizar a relação existente entre o
desenvolvimento sustentável e as atividades operacionais dos hostels e identificar se os hostels
em Lisboa procuram praticar as suas atividades de forma ambientalmente sustentável, assim
como as suas dificuldades.
Através de uma revisão de literatura, procurou-se definir o conceito de hostel, assim como
a sua origem, evolução, oferta e procura. Foi também através da revisão de literatura que se
apresentou o conceito de sustentabilidade ambiental, a sua origem e a prática de
sustentabilidade nas empresas.
Para além da pesquisa bibliográfica efetuada, utilizou-se, uma abordagem quantitativa,
com base num inquérito por questionário dirigido aos hostels em Lisboa.
Concluiu-se que, apesar de os hostels em Lisboa já terem consciência da importância de
praticarem as suas atividades operacionais de forma ambientalmente sustentável, ainda existem
oportunidades de melhoria, nomeadamente, no que diz respeito à gestão da preparação dos
alimentos. Adicionalmente, foi notada uma falta de informação no que diz respeito à
sustentabilidade, demonstrando que os hostels deveriam investir na mesma. Por fim, conclui-se que o fator económico constitui um obstáculo à prática de sustentabilidade dos hostels, assim
como a falta de adesão dos clientes.
Currently, environmental sustainability represents a concern for society. Unsustainable development is considered a threat to the environment. This thesis aims to characterize the relationship between sustainable development and the operational activities of hostels. Moreover, this project also intends to identify if Lisbon hostels seek to practice their activities in an environmentally sustainable way, as well as their constrains. Based on a literature review, the concept of hostel was defined, as well as its origin, evolution, supply, and demand. Moreover, it is also through this review that the concept of environmental sustainability, its origin, and the practice of sustainability in companies are presented. In addition to the research carried out, a quantitative method was developed, based on structured questionnaires addressed to hostels in Lisbon. Considering the obtained results, it was found that although the hostels in Lisbon are already aware of the importance of practicing their operational activities in an environmentally sustainable way, there are still opportunities for improvement, namely in food preparation management. Additionally, a lack of information regarding the sustainability matters was noticed, thus demonstrating that hostels must invest on this subject. Finally, the results also indicated that the economic factor is an obstacle to the practice of sustainability in hostels, as well as the lack of costumer compliance.
