Abstract(s)
O presente estágio foi realizado na empresa VS Consultoria Alimentar que se dedica à
prestação de serviços de consultoria alimentar e formação em diversas empresas do
ramo alimentar.
A realização do estágio teve por base o acompanhamento da implementação da norma
NP EN ISO 22000:2005 no cliente Matisilva Carnes, Lda com os seguintes objetivos : a
elaboração e implementação de documentação de referência do sistema de gestão de
segurança alimentar; a atualização do sistema HACCP implementado, identificando
oportunidades de melhoria e a execução de atividades de verificação do sistema de
gestão da segurança alimentar. Desta forma, durante a minha estadia na Matisilva
realizei diversas tarefas, desde o registo e análise de nova legislação, análise da
plataforma RASFF e elaboração documentação de referência como: fluxogramas de
fabrico, fichas técnicas, procedimentos operacionais, instruções de trabalho e tabelas
relativas ao HACCP.
Com a concretização do presente trabalho verifico que foi uma excelente oportunidade
de aprendizagem e obtenção de conhecimento, concluo também que a empresa
Matisilva apresenta excelentes condições e instalações e apresenta grande potencial
de crescimento.

This internship was held at the company VS Consultoria Alimentar, which provides food consultancy and training services in various food companies. The internship was based on the monitoring of the implementation of the standard NP EN ISO 22000: 2005 in the client Matisilva Carnes, Lda with the following objectives: the elaboration and implementation of reference documentation of the food safety management system; upgrading the implemented HACCP system, identifying opportunities for improvement, and performing food safety management system verification activities. Thus, during my stay at Matisilva I performed several tasks, from the registration and analysis of new legislation, analysis of the RASFF platform and preparation of reference documentation such as: manufacturing flow charts, datasheets, operating procedures, work instructions and tables concerning HACCP. With the realization of this work I find that it was an excellent opportunity for learning and obtaining knowledge, I also conclude that Matisilva company has excellent conditions and facilities and has great growth potential.
