A ASAE é a autoridade administrativa em Portugal, especializada nas áreas de segurança alimentar e fiscalização económica, é responsável pela avaliação e comunicação dos riscos na cadeia alimentar.O presente trabalho aborda o acompanhamento da implementação prática do Plano Nacional de Colheita de Amostras da ASAE no ano de 2020. Os principais objetivos do estágio foram a verificação se os Géneros Alimentícios cumprem a legislação nacional e comunitária. Foram acompanhados quatro tipos de atos inspetivos de fiscalização divididos por áreas de intervenção: Zonas turísticas, como centros históricos de cidades ou zonas balneares;Talhos;Acompanhar a verificação de um alerta da informação proveniente do Sistema de Alerta Rápido para os Géneros Alimentícios e Alimentos para Animais.Foi acompanhada uma análise de pesquisa de teor de sulfitos efetuado pelo Laboratório de Físico-Química da ASAE.No decorrer do estágio, na implementação do Plano Nacional de Colheita de Amostras, foram detetadas 7,87% de amostras não conformes, das 1496 amostras colhidas. No decorrer das atividades de fiscalização enumeradas neste trabalho, foram fiscalizados 617 agentes económicos, tendo sido detetadas 157 infrações, entre processos crime e processos de contraordenação. Os incumprimentos detetados, foram maioritariamente, no cumprimento dos requisitos gerais e específicos de higiene e ao nível do processo ou processos baseados nos princípios da Análise de Perigos e Pontos Críticos de Controle.
ASAE is the administrative authority in Portugal, specialized in the areas of food security and economic surveillance, and is responsible for assessing and communicating risks in the food chain. The present work addresses the monitoring of the practical implementation of the ASAE’s National Sample Collection Plan in 2020. The main goal of the internship was the verification of whether foodstuffs comply with national and community legislation or not. Four types of oversight inspection acts were followed, divided by areas of intervention: Tourist areas, such as historic city centers or bathing areas;Butchers’ shops;Monitor the verification of an information alert from the Rapid Alert System for Food and Feed.It was also followed a searching analysis of the sulfite content carried out by ASAE’s Physics and Chemistry Laboratory. In the implementation of the National Sample Collection Plan, during the time frame of the internship, out of 1496 collected samples, there were detected 7,87% non-compliant samples. During the inspection activities listed in this work, 617 economic agents were inspected, and 157 infractions were detected, among which were installed criminal proceedings and administrative offense proceedings. The non-compliances detected were mainly about general and specific hygienic requirements, or about the level of processing base on the principles of Hazard Analysis and Critical Control Points.
