O estágio profissionalizante desenvolvido na Chocolateria Delícia, Unipessoal
Lda encontra-se integrado no plano curricular do Mestrado em Engenharia Alimentar
lecionado pela Escola Superior Agrária de Coimbra, tendo decorrido entre 25 de
Fevereiro e 23 de Agosto de 2019.
A Chocolateria Delícia, Unipessoal Lda dedica-se à produção, distribuição e
venda por grosso ou retalho de chocolates. A empresa possui duas unidades de produção,
uma unidade de produção industrial de chocolates e uma loja de produção artesanal e
posterior venda ao público. O estágio decorreru na unidade de produção e venda de
chocolates artesanais
O principal objetivo do estágio foi a implementação de um sistema de segurança
alimentar eficaz e eficiente na unidade de produção e venda de chocolates artesanais.
Assim, no âmbito do estágio foram revistos e elaborados os pré-requisitos e posterior
implementação de um sistema de segurança alimentar baseado nos princípios do HACCP.
Outros trabalhos realizados foram: atualização das fichas técnicas, elaboração de
instruções de trabalho, realização de formações, realização de auditorias internas,
realização de inquéritos internos, registo de não conformidades, etc.

This professional internship developed at Chocolateria Delícia, Unipessoal Lda is part of the curriculum of the Master's degree in Food Engineering taught by the Escola Superior Agrária de Coimbra, which took place between 25th of February and 23rd of August 2019. Chocolateria Delícia, Unipessoal Lda is dedicated to the production, distribution and wholesale or retail of chocolates. The company has two production units, one is an industrial chocolate production unit and the other one is a craft production store that subsequently sales to the public. The internship took place at the artisan chocolate production and sales unit. The main objective of this internship was the implementation of an effective and efficient food safety system in the artisan chocolate production and sale unit. Thus, as part of the internship, the prerequisites and subsequent implementation of a food safety system based on the principles of HACCP were reviewed and elaborated. Other tasks were performed: updating the datasheets, drawing up work instructions, conducting training, conducting internal audits, conducting internal inquiries, recording nonconformities, etc. Key words: Food safety, Quality, HACCP, Hygiene
