O presente relatório descreve as atividades desenvolvidas durante o estágio curricular realizado na empresa Ambiglobal, Lda., no âmbito do Mestrado em Engenharia Alimentar da Escola Superior Agrária de Coimbra. O estágio teve como principal objetivo aplicar, em contexto real, os conhecimentos adquiridos ao longo da formação académica, com especial enfoque nas auditorias de segurança alimentar e na dinamização de ações de formação dirigidas a estabelecimentos do setor alimentar.As atividades realizadas incluíram a revisão documental dos sistemas HACCP, a elaboração dos dossiês de segurança alimentar, a participação em auditorias de diagnóstico e acompanhamento em diferentes tipologias de estabelecimentos (restaurantes, padarias/pastelarias, cafés, centros sociais, talhos, peixarias, minimercados e indústrias), bem como o apoio na realização de formações em higiene e segurança alimentar para manipuladores de alimentos.Os resultados obtidos evidenciam a diversidade de contextos acompanhados e demonstram a importância das auditorias e da formação contínua para a melhoria das condições de higiene, rastreabilidade, manutenção das infraestruturas e cumprimento dos requisitos legais. As ações desenvolvidas contribuíram para reduzir não conformidades e promover boas práticas, reforçando a proteção da saúde pública e a confiança dos consumidores.
This report describes the activities developed during the curricular internship carried out at the company Ambiglobal, Lda., within the scope of the Master's Degree in Food Engineering at the Agrarian School of Coimbra. The main objective of the internship was to apply, in a real context, the knowledge acquired throughout the academic training, with a special focus on food safety audits and the promotion of training actions aimed at establishments in the food sector.The activities carried out included the documentary review of HACCP systems, the preparation of food safety dossiers, participation in diagnostic and follow-up audits in different types of establishments (restaurants, bakeries/pastry shops, cafes, social centres, butchers, fishmongers, mini-markets and industries), as well as support in carrying out training in hygiene and food safety for food handlers.The results obtained highlight the diversity of contexts monitored and demonstrate the importance of audits and continuous training for the improvement of hygiene conditions, traceability, maintenance of infrastructures and compliance with legal requirements. The actions developed contributed to reducing non-conformities and promoting good practices, reinforcing the protection of public health and consumer confidence.
