O presente relatório foi elaborado no âmbito da disciplina de Estágio Profissionalizante, pertencente ao último ano do mestrado em Engenharia Alimentar, lecionado na Escola Superior Agrária de Coimbra, Instituto Politécnico de Coimbra. O estágio teve início no dia 4 de Janeiro e terminou no dia 1 de Julho de 2016 na empresa Lusiaves Indústria e Comércio Agro- Alimentar, SA.
O plano de trabalho centrou-se na aplicação/atualização da Metodologia Kaizen e na Organização 5S´s na área fabril da Marinha das Ondas, Figueira da Foz. Os principais objetivos deste estágio foram:
Aplicação de ferramentas Kaizen em gestão industrial; Qualificação e melhoria contínua das equipas de trabalho; Melhoria organizacional dos postos de trabalho; Relação destas ferramentas com a Segurança Alimentar;
O Kaizen é um termo de origem japonesa que significa “mudar para melhor”, define uma filosofia de melhoria contínua. Surge da junção de duas palavras “Kai” que significa “Mudar” e “Zen” que significa “Melhor”. Esta filosofia visa a prática da melhoria contínua aplicada diariamente, através do envolvimento de todos os colaboradores e aplicada em todas as áreas da organização. Para a implementação desta metodologia, a empresa Lusiaves, S.A, pediu a colaboração do Instituto Kaizen de Portugal. Esta implementação foi efetuada no ano de 2014
Numa perspetiva global, a empresa Lusiaves é uma empresa bem organizada que está sempre focada em conseguir cumprir todos os objetivos que são requeridos. No entanto, por vezes esse foco de querer apenas cumprir os objetivos de produção comprometem a aplicação destas metodologias. Contudo, através destas metodologias os objetivos de produção poderão ser cumpridos de forma mais eficiente.
Assim, um dos grandes objetivos deste estágio foi também mostrar que estas metodologias devem ser cumpridas de forma a ajudar as equipas de produção a cumprir os objetivos da organização, mantendo a qualidade dos produtos.

Abstract This report was prepared within the discipline of professional stage, belonging to the last year of the Masters in Food Engineering, taught in the Agrarian School of Coimbra Polytechnic Institute of Coimbra. The stage began on 4th of January and ended on 1st of July 2016 the company Lusiaves Industry and Agri-Food Trade, SA. The work plan focused on the implementation / update of Kaizen methodology and 5S's Organization in the industrial area of the Marinha das Ondas, Figueira da Foz The main objectives of this stage were: • Application of Kaizen tools in industrial management; • Qualification and continuous improvement of working teams; • Organizational Improvement of the jobs; • Ratio of these tools to Food Safety; Kaizen is a term of Japanese origin meaning "change for the better", defines a philosophy of continuous improvement. Arises from the junction of two words "Kai" means "change" and "Zen" means "better". This philosophy aims to the practice of continuous improvement applied daily, through the involvement of all employees and applied in all areas of the organization. To implement this methodology, Lusiaves company, S.A, requested the collaboration of the Kaizen Institute of Portugal. This implementation was done in 2014 In a global perspective, the Lusiaves company is a well organized company that is always focused on getting to meet all the objectives that are required. However, sometimes this focus just want to meet production goals undertake the application of these methodologies. However, using these methods production targets can be met more efficiently. Thus one of the main objectives of this stage was also show that these methods must be met in order to help production teams to meet the organization's goals while maintaining product quality.
