O presente relatório resulta do estágio curricular integrado no Mestrado em Engenharia Alimentar da Escola Superior Agrária de Coimbra. Este estágio teve lugar entre os dias 1 de fevereiro e 1 de agosto de 2021 na empresa Factor Alimentar - Consultoria em Segurança Alimentar, Unipessoal, Lda.Um dos objetivos do estágio foi o acompanhamento dos serviços de consultoria prestados pela empresa. Este objetivo foi atingido pela realização de auditorias a clientes e pela verificação das não conformidades mais frequentes nas diferentes atividades do setor alimentar.Outro objetivo do estágio foi a implementação, numa empresa vinícola, dos requisitos do referencial IFS Food, nomeadamente dos requisitos relativos à proteção contra a fraude alimentar e defesa dos alimentos. A necessidade da implementação destes requisitos resulta da solicitação feita por um cliente e também por uma maior preocupação da empresa relativamente à garantia da segurança e qualidade dos seus produtos.Assim, um capítulo é dedicado à norma IFS e aos requisitos implementados, avaliando a vulnerabilidade à fraude alimentar e a implementação do plano de mitigação da fraude alimentar. De seguida é feita uma abordagem do plano de defesa dos alimentos através da verificação da segurança das instalações, do armazenamento, da receção e expedição, da água e pessoal e definição das medidas de controlo.O capítulo seguinte é referente ao documento de preenchimento no âmbito de segurança no trabalho denominado relatório único e por ultimo é abordada a consultoria incluindo uma análise da influência do Covid-19 nesta área. Ainda que não sejam objetivos principais do estágio, estes dois temas são incluídos por terem sido relevantes no decurso do período de estágio.
This report results from the curricular internship integrated in the Masters in Food Engineering at Escola Superior Agrária de Coimbra. This internship took place between February 1st and August 1st, 2021 at Factor Alimentar - Consultoria em Segurança Alimentar, Unipessoal, Lda.One of the objectives of the internship was to monitor the consulting services provided by the company. This objective was achieved by carrying out customer audits and by verifying the most frequent non-conformities in different activities in the food sector.Another objective of the internship was the implementation in a winery of the requirements of the IFS Food benchmark, namely the requirements relating to protection against food fraud and the defense of food. The need to implement these requirements results from a request made by a customer and also from the company's greater concern with ensuring the safety and quality of its products.Thus, a chapter is dedicated to the IFS standard and the requirements implemented, assessing vulnerability to food fraud and the implementation of the food fraud mitigation plan. Next, an approach to the food defense plan is made by checking the security of the facilities, storage, reception and dispatch, water and personnel and definition of control measures.The next chapter refers to the filling document in the field of safety at work called single report and finally the consultancy is addressed, including an analysis of the influence of Covid-19 in this area. Although they are not the main objectives of the internship, these two themes are included because they were relevant during the internship period.
