Este trabalho teve como objetivo geral a determinação dos custos de produção de seis variedades de oliveiras (Olea europaea L.) tradicionais portuguesas cultivadas no Alentejo; a ‘Galega vulgar’, a ‘Azeiteira’, a "Cobrançosa’, a ‘Blanqueta’, a ‘Carrasquenha de Elvas’ e a ‘Cordovil de Serpa’, através do acompanhamento das respetivas contas de cultura, em olivais intensivos de regadio, em plena produção. Como objetivos específicos pretendeu-se caracterizar a estrutura e evolução dos custos ao longo de três anos (2016
a 2018) e comparar as diferenças de produtividade e de rendimento em azeite das variedades no mesmo itinerário técnico. Pretendeu-se, também, comparar a influência de diferentes itinerários técnicos nos custos de produção das variedades comuns a duas explorações. O estudo foi realizado em olivais de cinco explorações integradas no projeto OLEAVALOR, localizadas em Elvas, Monforte, Campo Maior e Serpa, designadas
por empresas “A”, “B”, “C”, “D”, “E”, por razões de confidencialidade. Os resultados obtidos conduziram às seguintes considerações: (a) os custos de produção variam com a variedade e com a exploração, variando entre 1 035€/ha e 1 559€/ha; (b) o peso dos custos diretos é de 90,0%, onde a colheita com 29,6% é a operação com os custos mais elevados e diretamente relacionados com a mão-de-obra, que é o fator de produção com o maior peso na estrutura de custos; (c) a produção de azeite por hectare variou entre 454 kg/ha e 1 451 kg/ha, dependendo da variedade e da exploração; (d) os custos de produção do quilo de azeitona mantiveram-se estáveis para cada variedade, independentemente do itinerário técnico, variando entre 0,16€/kg para a ‘Cobrançosa’ e 0,32-0,35€/kg para a ‘Azeiteira’; (e) o custo do quilo do azeite variou no mesmo sentido, entre 1,2€/kg (‘Cobrançosa’) e 3,2-3,6€/kg (‘Azeiteira’). Verifica-se que é possível identificar no itinerário técnico destas variedades quais as operações culturais menos eficientes para tentar aumentar a sua eficiência, de modo a reduzir custos de produção por hectare e por quilo de azeitona e de azeite, com vista a tornar as variedades de oliveira portuguesas competitivas, assegurando a produção de um azeite nacional diferenciado e rentável para os olivicultores nacionais.
This work aims to evaluate the production costs of six traditional varieties of olive trees (Olea europaea l.) in Alentejo, the ‘Galega vulgar’, ‘Azeiteira’, ‘Cobrançosa’, ‘Blanqueta’, ‘Carrasquenha of Elvas’ and ‘Cordovil of Serpa’ through monitoring the respective culture accounts, in intensive irrigated olive groves. As specific objectives, it was intended to characterize the structure and evolution of costs over three years (2016 to 2018) and to compare the differences in productivity and yield in olive oil of varieties in the same process of technical itinerary. It was also intended to compare the influence of different technical itineraries on the production costs of varieties common to two company. The study was carried out in olive groves of five companies integrated into the OLEAVALOR project, located in Elvas, Monforte, Campo Maior and Serpa, identified as "A", "B", "C", "C", "D", "E", for confidentiality reasons. The results obtained led to the following considerations: (a) production costs vary from variety to variety and from company to company, ranging from €1,035/ha to €1 559/ha; (b) the weight of direct costs is 90.0%, where the harvest with 29.6% is the operation with the highest costs and directly related to labor, which is the production factor with the highest weight in the cost structure; (c) olive oil production per hectare ranged from 454 kg/ha to 1,451 kg/ha, depending on variety and company; (d) the production costs of one kilo of olive oil remained stable for each variety, regardless of the technical itinerary, ranging from €0.16/kg to 'Cobrançosa' and €0.32-0.35/kg for ‘Azeiteira’; (e) the cost of one kilo of olive oil varied in the same direction, between 1.2€/kg ('Cobrançosa') and 3,2-3,6€/kg (‘Azeiteira'). It is verified that it is possible to identify in the technical itinerary of these varieties which are the least efficient cultural operations to try to increase their efficiency in order to reduce production costs per hectare and per kilo of olives and of olive oil, with a view to make competitive the Portuguese varieties of olive tree, ensuring a differentiated national olive oil and profitability of national olive growers
