O estágio teve como objetivo o acompanhamento das várias linhas de produção, garantindo sempre a qualidade e segurança alimentar, de forma a satisfazer as necessidades dos clientes. Para garantir produtos de qualidade, é necessário criar mecanismos e instruções a serem cumpridos, de modo a garantir a sua segurança ao longo da cadeia de fabrico, desde a receção das matérias-primas até a expedição do produto.Deste modo o relatório pretende descrever as tarefas realizadas como Técnica de Processo e Qualidade nomeadamente na colaboração na identificação das necessidades de melhoria, tanto em termos de formulação como de embalagens; na identificação e implementação de pontos de controlo no processo que contribuam para a qualidade do produto, melhoria contínua e diminuição do custo industrial; na análise de causas de não conformidade, propostas e implementação de ações corretivas/preventivas adequadas, com os diversos setores envolvidos; na colaboração com a equipa de HACCP no levantamento de perigos e definição de medidas de controlo do Sistema de HACCP (Análise de Perigos e Controlo de Pontos Críticos) e na colaboração com a produção na monitorização dos PCC (Pontos Críticos de Controlo).
The internship aimed to monitor the various production lines, always guaranteeing food quality and safety, in order to satisfy customers' needs. In order to guarantee quality products, it is necessary to create mechanisms and instructions to be followed, in order to guarantee their safety throughout the manufacturing chain, from the receipt of raw materials to the shipment of the product.In this way, the report intends to describe the tasks performed as Process and Quality Technician, namely in the collaboration in the identification of improvement needs, both in terms of formulation and packaging; in the identification and implementation of control points in the process that contribute to product quality, continuous improvement and reduction of industrial cost; in the analysis of causes of non-compliance, proposals and implementation of appropriate corrective / preventive actions, with the various sectors involved; in collaboration with the HACCP team in the survey of hazards and definition of control measures for the HACCP System (Hazard Analysis and Critical Control Point) and in collaboration with production in the monitoring of PCCs (Critical Control Points).
