RESUMEN: Esta investigación pretende sistematizar la información disponible del estado de conservación
de las antiguas fábricas de salazón en Cangas, Pontevedra. Aunque la salazón
de pescado se venía realizando desde la antigüedad de forma artesanal, no es
hasta mediados del siglo XVIII, con la llegada de los comerciantes catalanes, cuando
se comienzan a construir factorías por toda la costa, con una tipología arquitectónica
y un organigrama funcional característico, que consiguió aumentar considerablemente
la calidad y productividad de la salazón. Tras un siglo de intensa actividad, la salazón
de pescado se extinguió definitivamente a finales del siglo XIX, cediendo el testigo a
la actividad conservera. Las fábricas de salazón se asentaron en el paisaje litoral como
volúmenes cerrados, con gruesos muros de piedra extraída del propio lugar y con escasas
aberturas, en terrenos alejados del núcleo urbano, poco productivos y atractivos
para los locales por ser zonas muy vulnerables a los saqueos de piratas, tan frecuentes
en aquella época.
Los objetivos de este proyecto consisten en; inventariar las antiguas fábricas de salazón
en el municipio de Cangas y definir tipológica y funcionalmente su arquitectura. El
método de investigación para dar respuesta a los objetivos mencionados, será el estudio
de caso y el tratamiento de su información se ha desarrollado en nueve capítulos
que abarcan: la introducción, la elaboración marco teórico de referencia y la contextualización,
la elaboración de las fichas de inventario y caracterización arquitectónica de
los casos de estudio, el análisis de los datos obtenidos y finalmente, las conclusiones
que darán respuesta a los objetivos que se pretenden.
Con la realización de este trabajo, se intenta contribuir al conocimiento y valorización
de las antiguas fábricas de salazón, como valor patrimonial y memoria de una actividad
que tuvo lugar en un espacio y tiempo concretos y generó un modo de vida que
caracterizó a un determinado territorio y colectivo humano, para lograr su salvaguarda
y preservación.

Apesar da salga de peixe se vir desempenhando desde a antiguidade com técnicas artesanais, não é até meados do século XVIII, com a chegada de comerciantes catalães, quando eles começam a construir fábricas ao longo da costa, com uma característica tipología, arquitetónica e funcional, que conseguiu aumentar significativamente a qualidade e a produtividade da salga. Após um século de actividade intensa, a salga de peixe extinguiu- se definitivamente no final do século XIX, dando lugar à atividade de produção de conservas. As fábricas de salga, implantaram-se na paisagem costeira, nas áreas afastadas do centro da cidade, em terras pouco produtivas e atraentes para os moradores por serem lugares muito vulneráveis ás pilhagems de piratas, tão frequentes naquela época. Os objectivos deste projecto são: fazer um inventário das antigas fábricas de salga no município de Cangas e definir tipológica e funcionalmente a sua arquitetura. O método de pesquisa para responder aos objectivos acima, será o estudo de caso, e o tratamento da sua informação foi desenvolvido em nove capítulos: a introdução, o desenvolvimento de quadro teórico de referência e a contextualização, a elaboração dos registros de inventário, análise dos dados obtidos, e finalmente, as conclusões que responderão a os objectivos esperados. Com a conclusão deste trabalho, pretende-se contribuir para o conhecimento e valorização das antigas fábricas de salga, como património e memória de uma actividade que teve lugar num espaço e tempo específico e deu lugar a um modo de vida num determinado território e grupo humano, tendo em vista a sua salvaguarda e preservação. ABSTRACT: This research work, aims to systematize the information available from the state of conservation of the old salting factories in Cangas, Pontevedra. Although salting of fish had been processed since the old traditional way, it was not until the middle of the 18th century, with the arrival of Catalan merchants, when they begin to build factories along the coast, with an architectural typology and a characteristic functional chart, which managed to greatly increase the quality and productivity of salting. After a century of intense activity, the salting of fish was definitely ended at the end of the 19th century, giving witness to the canning activity. Salting factories settled in the coastal landscape as closed volume, with thick walls of stone extracted from the own place and few openings, in areas away from the city centre, little productive and unattractive to local people, and areas very vulnerable to looting of piracy, so prevalent at that time. There are now specific publications in the field of the architecture of these factories, only has been able to document with printed publications related to the history and ethnography. The objectives of this project are to make an inventory of the old salting factories in the municipality of Cangas and defining typological and functional architecture. The research method to respond to the above objectives, will be the case study and the treatment of the information which has been developed in nine chapters: ranging from the introduction; developing theoretical framework of reference and contextualization; the preparation of the records of inventory and characterization architectural case studies; analysis of the data obtained, and finally, the conclusions that will answer the objectives expected. With the completion of this work, the intention is to contribute to the knowledge and appreciation of the old factories of salting, as valuable heritage and memory of an activity that took place at a specific time and characterized a way of life for a particular territory and human collective, for safekeeping and preservation.
