Abstract(s)
Nos últimos anos, o setor do Turismo em Portugal tem vindo a bater recordes pelo seu
crescimento em resultados, receitas, criação de emprego e impacto nas regiões e é expetante
que esta fase de crescimento do setor se mantenha nos próximos anos.
Na indústria da restauração, depois de um período de declínio registado até 2014, o
último triénio (2015-2017) foi caracterizado por uma crescente melhoria resultante da
conjugação de dois fatores: crescimento do Turismo com aumento do número de visitantes
estrangeiros e de receitas e ainda recuperação do poder de compra por parte dos consumidores
nacionais. É hoje em dia uma indústria sinónimo de pleno emprego e forte dinamismo
decorrente da abertura de novos espaços.
E com as previsões anunciadas para os próximos anos de estabilidade política,
crescimento económico e diminuição do desemprego, a procura pela restauração terá tendência
para aumentar, com os consumidores a preferirem projetos onde possam desfrutar de uma
experiência única e inovadora.
É neste enquadramento que surgirá um novo projeto na área da restauração, o “ISO
Lisboa –Restaurant & Rooftop”.
Será um projeto inovador na cidade de Lisboa que aplicará o Modelo da Hospitalidade
Esclarecida como filosofia e modelo de gestão e ainda de relacionamento com os seus
stakeholders. Possibilitará também aos seus clientes usufruir de uma experiência sensorial num
ambiente moderno.
Nestes termos, o presente trabalho consiste na elaboração de um plano de negócios
estruturado para o projeto de restauração “ISO Lisboa –Restaurant & Rooftop” com o objetivo
de aferir da sua sustentabilidade ao implementar na indústria da restauração, em Portugal, o
Modelo da Hospitalidade Esclarecida, um modelo já com sucesso comprovado nos Estados
Unidos da América.
In recent years, Portuguese Tourism sector has broken records with its growth in results, revenues, job creation and regional impact and it is expected that this growth will continue in the coming years. On the other hand, and after a declining period until 2014, the restaurants activity was characterized in the last triennium (2015-2017) by a growing improvement as a result of two main reasons: positive change in the tourism area, with an increasing number of foreign visitors, and more revenues, combined with the national recovery of purchasing power. Within the coming years, the forecasts predicting economic growth and declining unemployment, the restaurants demand will tend to increase as consumers will tend to go more often to restaurants, choosing places where they can enjoy a unique experience. This positive context of entrepreneurship led to a new project in this area, a sector which is currently a synonymous of strong dynamism and competitiveness, resulting from the daily launch of new spaces. “ISO Lisboa –Restaurant & Rooftop” will be an innovative space in Lisbon, based on the proximity and regular relationship with its stakeholders, and enabling its clients to enjoy a sensorial experience in a modern environment, through the combination of an enlightened hospitality combined with a high-quality gastronomy based on fresh, traditional and authentic flavoured products. Therefore, this current work is based on the elaboration of a structured business plan for “ISO Lisboa –Restaurant & Rooftop” project, with the purpose of assessing its sustainability and financial viability, providing a natural experiment for applying a modern theory of hospitality built around stakeholder theory, the Enlightened Hospitality view.
