Abstract(s)

O pescado, pelas suas características, é um alimento extremamente promissor, sendo que Portugal é mesmo o maior consumidor da União Europeia e o terceiro a nível mundial. A Fripex, empresa na qual foi realizado este estágio, dedica-se à transformação, mais concretamente congelação, e comercialização de pescado. O trabalho realizado nesta empresa incidiu no controlo da qualidade alimentar e na gestão industrial. Relativamente ao controlo de qualidade alimentar, o mesmo teve por base o sistema HACCP, tendo havido um maior acompanhamento do mesmo. Já em relação à gestão industrial, foi realizada uma melhoria na gestão e quantificação de stocks, bem como uma melhoria da eficiência energética de todos os processos industriais e não industriais. Portugal is the largest consumer of the European Union and the third worldwide. Fripex, the company in which this stage was carried out, is dedicated to the transformation, more concretely freezing, and commercialization of fish. The work carried out in this company focused on food quality control and industrial management. As regards food quality control, it was based on the HACCP system, and there was more follow-up. Regarding industrial management, there was an improvement in the management and quantification of stocks, as well as an improvement in the energy efficiency of all industrial and non-industrial processes.
