Abstract(s)
Os alimentos desempenham um papel essencial na sociedade atual mas, por
mais que sejam importantes para nós, os seres humanos e o planeta Terra,
estamos rapidamente a levar à extinção a biodiversidade que temos à nossa
volta com as nossas ações – um problema recorrente no sistema alimentar atual.
Durante esta investigação analisamos exatamente o que é a extinção culinária e
o que está por detrás dela – para percebermos melhor como surgiu este conceito
e em que fase nos encontramos. O conceito de biodiversidade é também
analisado, bem como o impacto que estas mudanças estão a criar no nosso
sistema alimentar e cultura.
A partir daí, investigamos o papel que os alimentos têm, não só nas nossas
vidas, mas também na nossa cultura e a sua importância para o mundo, fazendo se seguir pelos números destas espécies ameaçadas, bem como o impacto que
têm no nosso sistema alimentar.
Concluímos que, se alguns dos nossos antigos ingredientes portugueses
caíssem em desuso, certamente seriam esquecidos e, um corpo de
conhecimento substancial seria inevitavelmente perdido e, nós, como indivíduos,
deveríamos tentar fazer uma mudança no sistema alimentar.
Por fim, apresentamos como protótipo a nossa primeira edição da caixa sensorial
e interativa sobre o trigo Barbela, a nossa proposta de um produto para partilhar
o conhecimento de um dos ingredientes esquecidos de Portugal.
Food plays an essential role in today’s society but, as much as it is important for us, humans, and the planet Earth, we are rapidly driving the biodiversity that we have around us to extinction with our actions – a recurrent problem in today’s food system. During this research we analyze exactly what is culinary extinction and what is behind it – to better understand how this concept emerged and in what stage we are in. The concept of biodiversity is also analyzed, as well as the impact these changes are creating in our food system and culture. From there, we investigate the role that food has, not only in our lives, but in our culture and its importance to the world, followed by the numbers of these endangered species as well as the impact they have on our food system. We conclude that, if some of our ancient Portuguese ingredients fall into disuse, they will certainly be forgotten, and a substantial body of knowledge would be inevitably lost and, we, as individuals, should try to make a change in your food system. Finally, we present as a prototype of the first issue of our sensory box on Barbela wheat, our take on a product to share the knowledge of one of the Portuguese forgotten ingredients.
