As alteraƧƵes dos hƔbitos alimentares, tem-se refletido na qualidade da
alimentação da população mundial. Estas mudanças resultam, não só da
maneira como as pessoas vivem, mas também da industrialização do presente
sƩculo, que direcionam para uma dieta mais rica no consumo de carne, leite e
derivados, ricos em gorduras e açúcares, e a redução do consumo de frutas,
leguminosas, vegetais e hortĆcolas, o que se traduz no aumento da obesidade,
as outras doenƧas crónicas nĆ£o transmissĆveis. A UniĆ£o Europeia tem realizado
esforƧos para que os consumidores estejam cada vez mais informados nas
escolhas.
A utilização do semÔforo nutricional surge como tentativa de facilitar a
leitura da informação nutricional dos produtos alimentares, porém a União
Europeia questiona se este mƩtodo consegue realmente encaminhar os
consumidores a fazerem melhores escolhas alimentares, uma vez que hĆ”
estudo que discutem poder ser mal interpretado e confuso.
O objetivo deste trabalho baseia-se na criação de uma nova sinalética de
informação alimentar, que promova a transparência de informação,
esclarecendo de forma clara o consumidor daquilo que o produto oferece em
termos nutricionais. Pretende ainda identificar o grau de compreensão dos
consumidores, relativamente ao semÔforo e à nova sinalética desenvolvida. Os
resultados revelam que o semÔforo nutricional não é percecionado
corretamente, levando a interpretaƧƵes semelhantes para sinais diferentes,
com uma amplitude alargada de resultados. O novo sistema infogrƔfico
apresenta resultados mais consistentes, sendo preferido pela maioria dos
respondentes, aproveitando grande potencial para implementação na indústria
e na restauração.
Changes in dietary habits have had consequences in the quality of food for the world population. These changes result not only from the way people live, but also from the industrialization of the present century, which lead to a diet richer in meat, milk and dairy products, also richer in fats and sugars, together with a reduction in fruit consumption, legumes and vegetables, which leads to increased obesity and other non-communicable chronic diseases. The European Union has made efforts to make consumers more informed about food choices. The use of nutritional traffic light system is an attempt to make nutritional information easier to read, but the European Union questions whether this method can really guide consumers to make better food choices, since there are studies that suggests it is being misinterpreted and confused. The objective of this work is to create a new infographic system to promote the transparency of information, clearly clarifying the consumer of what the product offers from the nutritional point of view. It also intends to identify the degree of consumer understanding, regarding the traffic light and the new infographic system developed. The results reveal that the nutritional traffic light is not correctly perceived, leading to similar interpretations for different signals, with a wide range of results. The new infographic system presents more consistent results, being preferred by most of the respondents, making it of great potential for implementation in industry and catering.
