No âmbito da unidade curricular de Estágio/Dissertação/Projeto do Mestrado em Engenharia Alimentar, efetuou-se o estágio na empresa IdealDrinks, empresa do sector vitivinícola, com o objetivo de apoiar a empresa no processo de preparação para a transição da ISO 22000:2005 para a nova versão de 2018.Para cumprir com o objetivo houve necessidade de se efetuar: um levantamento das necessidades da empresa e carateriza-la, efetuar uma análise ao sistema documentaldo material já existente da versão de 2005 e que ainda se aplica na atual versão, fazer a revisão do Programa de Pré-Requisitos, a atualização do Plano de Controlo de Perigos, documento que faz a junção do Plano de HACCP e do Programa de Pré Requisitos Operacional (PPRO) e delinear a sua monitorização. Os objetivos propostos para a realização deste estágio foram atingidos, a empresa encontra-se preparada para iniciar um processo de transição para a nova versão da norma ISO 22000.
As part of the Internship/Dissertation/Project of the Master in Food Engineering, an internship was carried out at IdealDrinks, a company in the wine sector, with the aim of supporting the company in the process of preparing for the transition from ISO 22000:2005 for the new 2018 version.In order to comply with the objective, it was necessary to carry out: a survey of the company's needs and its characterization, carry out an analysis of the documental system of the material already existing in the 2005 version and which still applies in the current version, carry out a review of the Program of Prerequisites, the update of the Hazard Control Plan, a document that joins the HACCP Plan and the Operational Prerequisites Program (OPRP) and outlines its monitoring.The proposed objectives for this internship were achieved, the company is prepared to start a transition process to the new version of the ISO 22000 standard.
