- UTILIZAÇÃO DE POLIFOSFATOS NA INDÚSTRIA TRANSFORMADORA DO PESCADO CONTROLO DOS NÍVEIS E EFEITO DO PROCESSAMENTOPublication . Rogério Mendes; Bárbara Teixeira; Helena Vieira; Fernandes, Cátia; Lourenço, Helena; Gonçalves, Susana; Martins, Fernanda; Instituto Português do Mar e da Atmosfera, I.P.The project POLYPHOSPHATES aimed at: (i) the quantification of phosphates added to seafood products in general and particularly to salted and dried cod and (ii) the study of the effect of industrial and domestic processing on polyphosphates content in the final products. This project enabled to: (i) acquire and install a system of analysis by ionic liquid chromatography with condutimetric detection; (ii) assemble and validate a methodology for ionic chromatography detection and quantification of different types of polyphosphates in fishery products; (iii) optimize a sample preparation technique of processed fishery products; (iv) define the increments in the drying time of salted cod as a function of the polyphosphates levels; (v) document the speciation of polyphosphates added to cod during the industrial processing and during the usual home food preparation; (vi) determine the levels of polyphosphates and citrates in various fish products commercially available.
