Produção e acompanhamento do porco Alentejano na montanheira

| dc.description.abstract | O grupo Bulhão Martins integra um conjunto de empresas agropecuárias situadas nos distritos de Évora e Portalegre. O estágio realizado entre março e julho de 2020 teve como objetivo o acompanhamento das tarefas inerentes à gestão e manutenção do efetivo pecuário, incidindo particularmente na produção de suínos em montanheira destinados à indústria transformadora em Espanha. Estimaram-se custos de produção de 358,70€/animal com 18 meses de idade. Na vara da Herdade de S. Domingos, engordaram-se 210 animais que entraram na montanheira com 13,5 meses de idade e um peso médio de 106,6 kg e permaneceram na montanheira 116 dias com um ganho médio diário (GMD) de 0,536 kg/dia. Com base nas análises do perfil de ácidos gordos no músculo realizadas pela entidade certificadora, esta vara enquadrou-se a classificação “bolota”. A campanha de 2019/2020 resultou na engorda e acabamento de 1625 animais, cuja idade média à entrada era de aproximadamente 16 meses, que permaneceram em média 120,15 dias na montanheira e manifestaram um GMD de 0,54 kg. Observou-se uma correlação negativa entre o GMD e o tempo de permanência na montanheira, que se prende com a necessidade de atingir o peso final mínimo exigido pela indústria. Os animais que entraram na montanheira com mais de 18 meses de idade apresentaram pesos iniciais, finais e ganhos totais superiores aos animais mais jovens. No entanto, permaneceram mais dias na montanheira e tiveram GMD inferiores, o que se justifica pelo facto de em animais mais velhos (que já não se encontram crescimento) o ganho de peso se dever principalmente à deposição de gordura. | dc.description.abstract | The Bulhão Martins group represents several agricultural companies located in the districts of Évora and Portalegre. The internship carried out between March and July 2020 aimed to follow the tasks inherent to the management and maintenance of livestock, focusing particularly on the production of pigs in montanheira system, destined for the ham and sausage production industry in Spain. Production costs of € 358.70 / animal at 18 months of age were estimated. At the Herdade de S. Domingos, 210 animals were fattened, entering the montanheira with 13.5 months of age and an average weight of 106.6 kg and remaining for 116 days with an average daily gain (ADG) of 0.536 kg / day. Based on the analysis of the fatty acid profile in the muscle carried out by the certifying company, these animals were classified as “acorn”. The 2019/2020 campaign resulted in the fattening and finishing of 1625 animals, with an average age at entry of approximately 16 months, which remained on average 120.15 days in the montanheira and showed an ADG of 0.54 kg. There was a negative correlation between the ADG and the time spent in the montanheira, which can be related to the need to reach the minimum final weight required by the industry. The animals that entered the montanheira with more than 18 months of age presented initial, final weights and total gains higher than the younger animals. However, they stayed more days in the montanheira and had lower ADG, which is justified by the fact that in older animals (which are no longer growing) the weight gain is mainly due to the deposition of fat.
