Abstract(s)
Dentro de uma empresa do setor alimentar no ramo dos congelados, efetuou-se o
estágio que tinha como propósito a implementação de um Sistema de Gestão Integrado,
baseado na norma ISO 9001:2015 e ISO 22000:2018, que permitirá traçar um caminho
que leve a ASA Congelados ao fornecimento de serviços de qualidade e produtos que
satisfaçam as expectativas e necessidades dos clientes e outras partes interessadas, tendo
sempre em conta a melhoria contínua.
Através de uma relação entre os requisitos exigidos pelas duas normas, analisouse cada um e traçou-se um caminho para poder chegar-se à certificação. Para isso houve
necessidade de se efetuar: um levantamento das necessidades da empresa e caracterizála, uma análise ao sistema documental existente e uma análise dos perigos (biológicos,
físicos ou químicos) e determinar o índice de risco associado a cada um. Esta análise
permitiu determinar os Pontos Críticos de Controlo (PCC) e o Programa de PréRequisitos Operacional (PRRO) e delinear a sua monitorização.
Os objetivos propostos para a realização deste estágio foram atingidos, porém a
ASA Congelados ainda não se certificou nas normas ISO, devido ao atraso existente na
construção da nova unidade, que irá contemplar as condições necessárias.

Inside a company of the food industry more specifically in the area frozen products, was carried out a study on the implementation of an Integrated Management System, based on ISO 9001:2015 and ISO 22000:2018, that will allow to chart a path that will take the company "ASA Congelados" to provide quality services and products that meet the expectations and needs of consumers and other stakeholders, always with the purpose of continuous improvement. Through a relationship between the requirements requested by the two norms, a analysis was made for each requirements and a path has been mapped out for certification. For this, it was necessary to carry out: a survey of the needs of the company and characterize it, an analysis of the document system existing and an analysis of hazards (biological, physical or chemical) and determine the risk index associated with each. This analysis made it possible to determine the Critical Control Points (CCP’s) and the Operational Prerequisite Program (OPRP’s) and to outline their monitoring. The proposed objectives for the realization of this stage have been achieved, but ASA Congelados don't have certified in ISO standard, due to the delay in the construction of the new unit, which will be contemplate the necessary conditions.
