Foi realizado na superfície comercial Auchan de Eiras, tendo a duração de 6 meses. Iniciou a 10 fevereiro 2020, tendo sido interrompido de 18 março a 4 maio, devido à pandemia que o mundo atravessa causada pelo Covid-19. Teve o seu termino a 25 setembro 2020.O objetivo do estágio estaria muito focado ao Mercado Frutas e Verduras, com os seus procedimentos de controlo de qualidade, atividades logísticas e gestão, nomeadamente tarefas como o conhecimento e acompanhamento dos procedimentos de receção de frutas e verduras, os critérios de qualidade, rastreabilidade de frutas e verduras a granel, controlo de validades e gestão de stocks (roturas, gamas, reaprovisionamento automático).Devido à pandemia, o tema inicial do estágio (estudo sobre o efeito da origem vs preço dos artigos do Mercado Frutas e Verduras) foi restruturado, pois não reunia as condições para o manter: os indicadores a serem avaliados, como por exemplo a venda estavam a ser influenciados. Pela perceção de que a afluência ao supermercado estava a mudar, decidi fazer um pequeno estudo das alterações nos indicadores de gestão do “antes” e “durante”. Infelizmente não pude fazer o após pandemia, contudo considerei “após” o período do 1º pico da sucessão de Estados de Emergência a que o País esteve durante 1 mês e 2 semanas. Aliado ao trabalho diário com as equipas, será apresentado o meu projeto de melhoria efetuado na loja e com as equipas (como por exemplo melhorar olhar cliente, produtividade da equipa). Durante o período de estágio foi ainda possível visitar a Auchan de Coimbra, Figueira da Foz e Aveiro adquirindo noção de outras realidades trazendo possíveis boas-práticas para a loja de Eiras. Posto isto, o objetivo do estágio foi restruturado, deixando de me focar apenas no mercado Frutas e Verduras, e mantendo-me ativa da mesma forma nos três mercados: Frutas e Verduras, Peixaria e Talho.The present report was written in virtue of the curricular internship inserted on the Master of Food Engineering from the school Escola Superior Agrária in Coimbra. This internship was carried out on the commercial area Auchan de Eiras for the past six months. It began on the 10th of February, however because of the World Pandemic Covid-19 was interrupted from 18th of march to 4th of May, so the internship ended at 25th of September of 2020.The goal of the internship was supposed to be focused on the market of Fruits and Veggies and its procedures of quality control and management of logistics. Therefore, the procedure of fruits and veggies reception, quality standards, traceability of the fruits and veggies in bulk, shelf life control and management of stocks (rupture of product, product range and automatic replenishment).Due to the Covid-19 Pandemic, the initial theme for the internship (study about the effect of origin versus prices of the market of the fruits and veggies) was restructured because it didn’t gathered the conditions to keep it, that means that the markers that I was going to evaluate were being influenced by the pandemic. The affluence of supermarket was changing, so I decide to make a small study of the variations of the management markers – the before and the ongoing of the pandemic. Unfortunately, I wasn’t able to study the management markers of the after pandemic, however I’ve considered the management markers – the after – the final of the state of Emergency that the country was submitted for one month and two weeks.Beyond the daily teamwork I will be presenting as well, my improvement project that was made along with the work team on the supermarket. During my internship I was able to visit other Auchan supermarket stores – Coimbra, Figueira da Foz and Aveiro. With that visits I was able to notice other realities that allowed me to bring good practices to the Auchan Eiras.Hereupon, the goal of the internship was restructured from focusing only on the Fruit and Veggies Market to an active part of the three markets: Fruits and Veggies, Fishmonger and Butchery.porDistribuiçãoMelhoriasCovid-19master thesis202977269
